Tasty Fish Goujons

What you need
4 pieces of skinless white fish (cod, haddock or similar white fish)
4 tablespoons plain flour
2 eggs
1 mug fresh breadcrumbs
3 tablespoons vegetable oil
Salt and pepper

Method
Preheat oven to 200°C, fan oven 180°C, gas mark 6.
Cut the fish into goujons the size of a big finger.
Put the flour on a plate and add salt and pepper.
Spread the breadcrumbs out on another plate.
Break the eggs into a bowl and beat well.
Toss the goujons in the seasoned flour and shake off the excess and then dip them into the egg mixture.
Remove from the egg mixture and toss the goujons in the breadcrumbs.
Drizzle the oil on a baking tray and bake the goujons in the oven for 10/12 minutes turning carefully halfway through.
Serve with potato wedges (see recipe) and peas or green salad (see recipe).
