Green Salad with Honey Dressing

What you need

  • 1 small cos or any green lettuce

  • ½ cucumber

  • 1 green pepper

  • 2 sticks of celery

  • 1 avocado (optional)

For the dressing

  • 4 tablespoons olive oil

  • 1 tablespoon honey

  • 1 tablespoon wholegrain mustard

  • 1 tablespoon Balsamic vinegar

  • Juice of 1 lemon

Equipment

  • Mug

  • Large bowl

  • Knife

  • Chopping board

  • Tablespoon

Method

  1. Combine all the ingredients for the dressing in a mug.

  2. Slice the lettuce, cucumber, celery and green pepper and put them into a large bowl.

  3. If you are adding an avocado don’t prepare it until just before serving the salad. Cut the avocado in half, remove the stone with a tablespoon, scoop out the avocado and slice it. Add the avocado to the other salad ingredients in the bowl.

  4. Pour the dressing over the salad when ready to serve.

You can serve this green salad with just about any savoury dish and the dressing gives it a lovely flavour.
