Potato Frittata

What you need

  • 3 eggs

  • 2 medium cooked and peeled potatoes cut into cubes

  • ½ red or green pepper chopped

  • ½ small red or white onion chopped

  • 1 tablespoon sweetcorn

  • 1 tablespoon cooked peas

  • ½ mug grated cheese

  • 2 tablespoons vegetable oil

  • Salt and pepper

Equipment

  • Knife

  • Cheese grater

  • Chopping board

  • Tablespoon

  • Frying pan

  • Spatula

Method

  1. Put the oil in the frying pan and cook the onion, pepper and potatoes on medium heat until soft.

  2. Add the sweetcorn, peas, beaten egg, salt and pepper.

  3. Cook until the underneath of the frittata is brown and crispy.

  4. Sprinkle grated cheese on top of the frittata and put the pan under a hot grill until the cheese is melted and the egg is cooked.

  5. Divide the frittata between 2 plates and serve with a green salad (see Recipe).

Frittata means fried in Italian. Frittata is an Italian egg-based dish similar to an omelette.
