Minestrone Soup

What you need

  • 2 carrots

  • 2 sticks of celery

  • 1 small onion

  • 1 sweet pepper – any colour

  • 1 medium potato

  • ¼ small green cabbage (optional)

  • 2 tins of chopped tomatoes

  • 1 vegetable stock cube

  • ½ mug of hot water

  • 1 teaspoon chilli powder

  • 2 tablespoons vegetable oil

  • ½ mug of pasta shapes

  • Salt & pepper

  • 2 Saucepans

  • Knife

  • Chopping board

  • Teaspoon

  • Fork

Method

  1. Chop all vegetables into small cubes.

  2. Put oil into one saucepan and fry off the onion until soft.

  3. Add all the other chopped vegetables except the cabbage and stir well.

  4. Dissolve stock cube in the hot water and add to the saucepan.

  5. Add the tinned tomatoes, chilli, salt and pepper to the saucepan and bring to the boil.

  6. Turn down temperature and simmer until the vegetables are just soft.

  7. Put 2 mugs of water into the second saucepan. Bring the water to the boil and add the pasta shapes. Cook for 10 minutes and drain off the water.

  8. Add the cooked pasta and cabbage to the vegetable saucepan and simmer for another 5 minutes.

  9. Serve in soup bowls with your fresh oat bread! (see recipe)

We cut up the vegetables into small cubes so that even those of us not mad about some of the veggies loved the soup!
